Happy Hour | Blood Orange Champagne Cocktail

Getting a little sick of the standard Sunday brunch mimosa?  I am, so lets put a twist on your mimosa this weekend with a Blood Orange Champagne Cocktail!

Blood oranges typically contain higher concentrations of Vitamin C and have a sweeter taste.  The crimson color of the blood orange will make your cocktail a beautiful ruby red!

Blood Orange Champagne Cocktail Recipe

  • 1 Bottle of Champagne (your choice)
  • 1/2 gallon of blood orange juice (found at the grocery store) or 1 bag of fresh blood oranges to juice

Note: Chill champagne and juice  

Fill champagne flute or tumbler 1/4 full with blood orange juice and the rest with champagne.  If using fresh blood oranges, garnish with a slice!

Day 11: I’m Sorry Flowers

I have gotten more flowers than ever since moving to San Francisco, maybe because there are flower stands on every corner (I’m not complaining) I thought I was taking my own advice on how to make flowers last longer by keeping them out of direct sunlight, in a cool area, in fresh water, yada yada.  All of my pretty flowers were dying in days!

I received these beautiful flowers 11 days ago.  This time  I put them inside next to the window in natural sunlight and they look amazing!  Have you ever seen flowers look this good at nearly 2 weeks?!

Easy Snickerdoodle Cookies

Can I start by saying I am obsessed with snickdoodle cookies, ok actually anything snickerdoodle; custard, hot cocoa, you name it! I rarely make them as this recipe can be time consuming and complicated, so I was on the hunt for a easy snickerdodle cookie recipe.  

Sandra Lee Semi-Homade is one of my favorite cooking shows.  She creates inexpensive and delish meals by incorporating fresh foods with prepackaged products.  Anything that saves me time and money is a win in my book; especially if it makes me look like a “fancy cook”.  I came across one of her snickerdoodle recipes on the back of a bag of sugar I just purchased and decided to give it a whirl.

Easy Snickerdoodle Cookies

You will need…

  • 1 package refrigerated sugar cookie dough
  • 2 ounces softened cream cheese
  • 1/2 cup powdered (confectioners) sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup granulated sugar
  • 1/4 teaspoon cinnamon

1. Preheat oven to 350 degrees F.

2. Mix together cookie dough and cream cheese.  Add in powdered sugar and vanilla extract until dough is smooth.

Hint: Make sure cookie dough is thawed out and will mix easier if broken into sections

3. Scoop small balls of dough onto a plate covered with the sugar and cinnamon mixture then place balls on a greased cookie sheet

Hint: Dough will be super sticky work carefully and do not expect perfect balls!

4. Bake for 15 minutes or until edges are browned

These easy snickerdoodles would be perfect to bring into the office, a bake sale, or when having company over.  I’m not a great baker but this recipe took me 30 minutes total and they are delish!

You might be wondering why I didn’t use my own image, long story short I forgot to grease my pan so the cookies were not exactly feeling the camera tonight :)

Happy Hour: Cherry Vodka Lemonade

Iv’e been in Florida for the past week soaking up rays at the beach and I discovered my new fav beach treat, Cherry Vodka Lemonade!  It is so cool and refreshing it would be perfect for an outdoor BBQ or an afternoon at the pool! The best part is is so easy to make!

Cherry Vodka Lemonade Recipe

  • Thee Olives Cherry  (or whatever brand of cherry vodka you prefer)
  • Lemonade (I love Publix brand, its frequently B1G1 during the summer)
  • Sprite (any lemon lime drink)
  • Grenadine (optional garnish)

Shake up 2oz. cherry vodka, 6oz. lemonade, and a splash of sprite with ice.  Pour in chilled glass, add a splash of grenadine and a lemon slice to garnish!

This is also simple to make for a large crowd, adjust measuments to quantity and taste! Happy Friday and enjoy!

Happy Hour | Berry Cocktail Popsicles

What better way to ring in summer than with Berry Cocktail Popsicles!  These are great for an afternoon treat sitting on the patio and easy enough to make for a crowd.  Using fresh fruit and a low calorie alcohol they wont have you bursting at the seams while poolside.

Berry Cocktail Popsicles

*Note you will need a freezer, blender, and popsicle molds (if making for a crowd dixie cups and popsicle sticks will be great)

*Also note that this recipe is to my particular taste and can be modified to yours!

What you’ll need…

  • Crate of strawberries
  • Lime juice (or a small lime)
  • Blueberry vodka
  • Splenda (or your choice of sweetener)

Puree strawberries, 2 tbsp. of sweetener, 1/4 cup of lime juice (or one lime blended), and 6 oz. of vodka.  Once the mixture is liquid (few chunks of fruit) pour into popcicle holders and freeze overnight.  If using dixie cups place in a shallow baking dish and cover the top with foil allowing sticks to poke through.

Tip: These melt fast on a hot day so keep in the freezer until its time to eat, if hosting a party put them “pop down” in a ice bucket!
